Exotic Cactus & Lobster Stir-Fry Recipe

Introduction

Today, I’m excited to share a unique and flavorful recipe that I recently discovered by accident. This dish is perfect for those cozy evenings when you want something warm and comforting but with a twist.

Ingredients

  • 2 cactus leaves (tunas)
  • 2 lobster tails
  • 1 dragon fruit
  • Handful of mint leaves
  • 1 stalk lemongrass
  • 400ml coconut milk
  • 1 lime
  • 2 chili peppers
  • 200g rice noodles

Kitchen Tools

  • chef’s knife
  • cutting board
  • skillet
  • grater
  • wooden spoon

Preparation

Start by cleaning the cactus leaves and removing the thorns. Slice them into thin strips and set aside. Next, prepare the lobster tails by removing the shells and cutting the meat into bite-sized pieces. Peel and dice the dragon fruit, finely chop the mint leaves, and slice the lemongrass.

In a skillet, heat the coconut milk over medium heat and add in the cactus, lobster, dragon fruit, mint, lemongrass, and diced chili peppers. Let it simmer for about 10 minutes until the flavors meld together.

Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.

Once the cactus and lobster mixture is cooked, add the cooked rice noodles to the skillet and mix well. Squeeze in the juice of the lime and stir to combine all the flavors.

Tips

For an extra kick of heat, add some sliced chili peppers to the dish just before serving. The spiciness pairs wonderfully with the sweetness of the dragon fruit.

Serving

This exotic cactus and lobster noodle stir-fry weighs approximately 1200g after cooking. It serves 4 people, with each serving weighing around 300g. Each serving contains approximately 450 calories.
