Today, I’m excited to share my recipe for Spiced Pumpkin Risotto. This dish is perfect for the cozy autumn evenings when you want something warm and comforting. The combination of creamy risotto with the subtle sweetness of pumpkin and a blend of warm spices is truly a treat for the taste buds.

Ingredients:

  • 200g Arborio rice
  • 300g pumpkin, diced
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 liter vegetable broth
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 50g butter
  • 50g grated parmesan cheese
  • To taste

Kitchen Tools:

  • Large saucepan
  • Wooden spoon
  • Sharp knife
  • Grater

To start, heat the vegetable broth in a large saucepan over medium heat. In another pan, melt the butter and sauté the onion and garlic until soft. Add the Arborio rice and toast it for a couple of minutes until slightly translucent.

Next, add the diced pumpkin to the rice mixture and season with cinnamon, nutmeg, and ground cloves. Begin adding the warm vegetable broth, one ladle at a time, stirring continuously until absorbed before adding more. Continue this process until the rice is creamy and cooked through, approximately 18-20 minutes.

Once the risotto is cooked to your liking, stir in the grated parmesan cheese and season with salt and pepper. Serve hot, garnished with an extra sprinkle of parmesan and a dash of fresh nutmeg for an extra burst of flavor.
