Ingredients:

  • 2 chicken breasts (400g)
  • 1 ripe mango (200g)
  • 1 can of coconut milk (400ml)
  • 2 tablespoons of curry powder
  • 1 onion, chopped (150g)
  • 3 cloves of garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 1 red chili, sliced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste
  • Olive oil

Start by slicing the chicken breasts into bite-sized pieces and seasoning them with salt and pepper. In a skillet over medium heat, cook the chicken in olive oil until browned and cooked through. Remove the chicken from the skillet and set it aside.

In the same skillet, add a bit more olive oil and sauté the chopped onion, minced garlic, grated ginger, and sliced chili until fragrant. Add in the curry powder and cook for another minute.

Peel and dice the ripe mango, then add it to the skillet along with the coconut milk. Let the mixture simmer for about 10 minutes until the mango is soft and the sauce has thickened.

Return the cooked chicken to the skillet and stir everything together, allowing the flavors to meld for a few more minutes. Taste and adjust the seasoning with salt and pepper as needed.

Serve the Mango Curry Chicken over steamed rice, garnished with fresh cilantro for a burst of freshness.
