Introduction:

Today, I’m excited to share a unique and flavorful dish that I recently created. This recipe was inspired by a spontaneous trip to the farmer’s market, where I stumbled upon some unusual ingredients that sparked my creativity in the kitchen.

Ingredients:

  • purple cauliflower (250g)
  • black garlic (2 cloves)
  • tahini (50g)
  • pomegranate molasses (30ml)
  • toasted sesame seeds (15g)

Kitchen Tools:

  • food processor
  • oven
  • baking sheet

Preparation:

I start by preheating the oven to 400°F. Next, I break down the purple cauliflower into florets and place them on a baking sheet. I roast the cauliflower in the oven for about 20-25 minutes, until they are tender and slightly charred.

While the cauliflower is roasting, I prepare the sauce. In a food processor, I combine the black garlic, tahini, and pomegranate molasses. I blend everything until smooth and creamy.

Once the cauliflower is done roasting, I transfer it to a serving dish and drizzle the sauce on top. To finish the dish, I sprinkle toasted sesame seeds for a crunchy texture and nutty flavor.

Tips:

For an extra kick of flavor, you can add a pinch of smoked paprika to the sauce. It will add a subtle smokiness that complements the sweetness of the pomegranate molasses.

Serving:

This recipe yields approximately 4 servings. The total weight of the cooked dish is around 400g. Each serving is about 100g.
