Today, I am excited to share a unique and flavorful recipe that combines the sweetness of sweet potatoes with the tartness of blueberries in a non-traditional way. This dish is perfect for a summer gathering or a fun weeknight dinner when you want to try something different.

Ingredients:

  • 2 medium sweet potatoes (500g), peeled and diced
  • 1 cup blueberries (150g)
  • 1/2 red onion (75g), thinly sliced
  • 8 corn tortillas
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, chopped, for garnish

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the diced sweet potatoes on the baking sheet, drizzle with 1 tablespoon of olive oil, cumin, salt, and pepper, and toss to coat. Roast in the oven for 25-30 minutes until the sweet potatoes are tender and slightly caramelized.

In a skillet over medium heat, add the remaining olive oil and red onion. Saute for 3-4 minutes until the onions are softened. Add the roasted sweet potatoes, blueberries, maple syrup, and lime juice to the skillet. Stir gently to combine and allow the flavors to meld together for another 2-3 minutes.

Warm the corn tortillas in a dry skillet or directly over a gas flame for a few seconds on each side until they are pliable. Fill each tortilla with the sweet potato and blueberry mixture and garnish with fresh cilantro.

This dish serves 4 people and each serving weighs approximately 200g. One serving of these sweet potato and blueberry tacos is around 300 calories.

A unique tip to enhance the flavors of this dish is to sprinkle some crumbled feta cheese on top before serving. The salty richness of the cheese pairs perfectly with the sweetness of the blueberries and sweet potatoes, adding an extra layer of deliciousness to the tacos.
