  • grapefruit, segmented (1)
  • fresh mint leaves, chopped (handful)
  • pistachios, roughly chopped (50g)
  • olive oil (30ml)
  • fresh lemon juice (30ml)
  • ground cumin (1 tsp)
  • ground coriander (1 tsp)
  • salt and pepper to taste
