Today, I’m excited to share a cozy and comforting fall recipe that always brings me joy during the cooler months. This Roasted Butternut Squash and Sage Risotto is the perfect dish to warm you up on a chilly evening. The creamy textures of the risotto combined with the earthy flavors of the roasted squash and fragrant sage create a harmonious taste experience that will satisfy your taste buds.

Ingredients:

  • Arborio rice (300g)
  • Butternut squash, peeled and diced (500g)
  • Fresh sage leaves, chopped (1/4 cup)
  • Vegetable broth (1 liter)
  • Onion, finely chopped (1)
  • Garlic cloves, minced (2)
  • Parmesan cheese, grated (1/2 cup)
  • Butter (2 tbsp)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

  • Cutting board
  • Baking sheet
  • Saucepan
  • Wooden spoon

To start, preheat your oven to 400°F (200°C). Place the diced butternut squash on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for about 30 minutes until tender and slightly caramelized.

In a saucepan, heat the vegetable broth over low heat. In another large saucepan, melt the butter with olive oil over medium heat. Add the chopped onion and garlic, cooking until softened. Add the Arborio rice and stir until coated with the butter and oil mixture.

Begin adding the warm vegetable broth to the rice mixture, one ladleful at a time, stirring continuously until absorbed before adding more. This process should take about 20-25 minutes until the rice is creamy and tender.

Once the risotto is cooked, stir in the roasted butternut squash, chopped sage, and grated Parmesan cheese. Season with salt and pepper to taste. Let the flavors meld together for a few minutes before serving hot.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving weighs about 300g.
