Exotic Coconut Curry Lamb Chops Recipe

Today, I’m excited to share a unique and flavorful dish that’s perfect for a cozy night in or a special gathering with friends. This recipe combines unexpected ingredients to create a dish that will surprise and delight your taste buds.

Ingredients:

  • saffron threads (0.5g)
  • lamb chops (4 pieces, 500g)
  • fresh pineapple chunks (200g)
  • fennel bulbs, sliced (2 bulbs, 300g)
  • coconut milk (400ml)
  • curry powder (2 tbsp)
  • lime juice (1/4 cup)
  • fresh cilantro, chopped (for garnish)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • skillet
  • wooden spoon

Preparation:

Start by soaking the saffron threads in a small bowl with a splash of warm water. Let it steep while you prepare the rest of the dish.

In a skillet over medium heat, sear the lamb chops until they are browned on both sides. Remove the chops from the skillet and set them aside.

Add the sliced fennel to the skillet and sauté until it is caramelized and fragrant. Return the lamb chops to the skillet and add the pineapple chunks.

Pour in the coconut milk, curry powder, lime juice, and the saffron (along with the water it was soaking in). Stir everything together and let it simmer for about 20 minutes, or until the lamb is cooked through and the flavors have melded together.

Serve the lamb chops and fennel curry hot, garnished with fresh cilantro.

Tips:

For an extra burst of flavor, try adding a handful of toasted coconut flakes to the dish before serving. This will add a crunchy texture and a subtle coconut flavor that complements the other ingredients beautifully.

Serving:

This dish weighs approximately 1200g once cooked and serves 4 people. Each serving is around 300g, with an estimated calorie count of 400 per portion.
