Today’s Seasonal Fusion Recipe: Summer Strawberry Basil Risotto

Hello foodies! Today, I’m excited to share a unique and flavorful recipe that combines the sweetness of summer strawberries with the fresh herbaceous notes of basil in a creamy risotto. This dish is perfect for a warm summer evening when you want something light yet satisfying.

Ingredients:

  • Arborio rice (200g)
  • Fresh strawberries, diced (150g)
  • Fresh basil leaves, chopped (20g)
  • Shallot, minced (1)
  • White wine (1/2 cup)
  • Vegetable stock (4 cups)
  • Butter (2 tbsp)
  • Parmesan cheese, grated (1/2 cup)
  • Salt and pepper to taste

Kitchen Tools:

  • Saucepan
  • Wooden spoon
  • Chef’s knife
  • Grater

To start, bring the vegetable stock to a simmer in a saucepan. In another saucepan, melt the butter over medium heat. Add the minced shallot and sauté until translucent. Add the Arborio rice and toast for a couple of minutes until slightly translucent around the edges.

Deglaze the pan with white wine, stirring constantly until the wine is absorbed. Begin adding the warm vegetable stock, one ladleful at a time, stirring continuously until absorbed before adding more. This process should take about 18-20 minutes, and the rice should be creamy but with a slight bite.

Once the risotto is almost ready, stir in the diced strawberries and chopped basil, allowing them to cook for a minute to soften slightly. Remove the risotto from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

Serve the summer strawberry basil risotto hot, garnished with fresh basil leaves and extra Parmesan cheese if desired.
