Summer Recipe: Roasted Peach and Prosciutto Salad

Today, I’m excited to share a unique and refreshing summer salad that brings together the sweetness of roasted peaches with the savory goodness of prosciutto. This dish is perfect for a hot summer day when you’re craving something light yet satisfying.

Ingredients:

  • 2 ripe peaches (sliced)
  • 100g prosciutto (thinly sliced)
  • 50g arugula
  • 50g goat cheese (crumbled)
  • 30g walnuts (chopped)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Kitchen Tools:

  • mixing bowl
  • whisk

To start, preheat your oven to 400°F (200°C). Place the sliced peaches on a baking sheet and drizzle with a tablespoon of olive oil. Season with salt and pepper, then roast in the oven for about 15 minutes, or until the peaches are caramelized and tender.

While the peaches are roasting, heat a skillet over medium heat. Add the prosciutto slices and cook until crispy, about 3 minutes per side. Remove from the skillet and let cool before breaking into smaller pieces.

In a mixing bowl, whisk together the remaining olive oil, balsamic vinegar, salt, and pepper to create the dressing.

Once the peaches are done roasting, assemble the salad by combining the arugula, roasted peaches, crispy prosciutto, crumbled goat cheese, and chopped walnuts in a large bowl. Drizzle the dressing over the salad and toss gently to combine.
