Mango-Coconut Curry Risotto

Today, I’m excited to share my unique recipe for Mango-Coconut Curry Risotto. This dish combines the creamy richness of traditional risotto with the tropical flavors of mango and coconut, creating a fusion dish that is both comforting and exotic. It’s perfect for a cozy night in or a special dinner party with friends.

Ingredients:

  • 200g Arborio rice
  • 400ml coconut milk
  • 1 ripe mango, diced
  • 2 tbsp curry powder
  • 1 liter vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • Handful of fresh cilantro, chopped
  • 1 lime, zest and juice
  • To taste

Kitchen Tools:

  • wooden spoon
  • chef’s knife
  • grater

To start, heat the vegetable broth in a saucepan over low heat. In another saucepan, sauté the chopped onion and minced garlic until translucent. Add the Arborio rice and curry powder, stirring to coat the grains.

Begin adding the warm vegetable broth one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is cooked al dente, about 18-20 minutes.

Once the risotto reaches the desired consistency, stir in the coconut milk and diced mango, allowing them to heat through. Season with salt and pepper to taste.

Before serving, add the zest and juice of a lime for a burst of citrus flavor. Garnish with freshly chopped cilantro for a pop of freshness.

This Mango-Coconut Curry Risotto is best enjoyed hot, straight from the stove. The creamy texture of the coconut milk paired with the sweetness of the mango and the savory curry flavors creates a truly unique dish that will tantalize your taste buds.
