Today, I’m excited to share a unique and flavorful dish perfect for a cozy night in or a special dinner with friends. This Mango Curry Risotto is a fusion of creamy Italian comfort food and exotic Indian spices, creating a symphony of flavors that will leave your taste buds dancing.

Ingredients:

  • 200g Arborio rice
  • 1 ripe mango, diced
  • 400ml coconut milk
  • 1 tbsp curry powder
  • 1L vegetable broth
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lime, juiced
  • Fresh cilantro for garnish
  • Salt and pepper to taste

To start, heat the vegetable broth in a saucepan over low heat. In another saucepan, sauté the onion, garlic, and ginger until fragrant. Add the Arborio rice and curry powder, stirring to coat the grains.

Gradually ladle the warm vegetable broth into the rice mixture, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is creamy and cooked to al dente, about 18-20 minutes.

Next, stir in the diced mango, coconut milk, and lime juice. Season with salt and pepper to taste, adjusting the curry powder if desired. Cook for an additional 5 minutes to allow the flavors to meld together.

Once the Mango Curry Risotto is creamy and fragrant, remove from heat and let it rest for a few minutes. Serve hot, garnished with fresh cilantro for an extra burst of flavor.
