  • black rice – 150g
  • coconut milk – 400ml
  • shrimp (peeled and deveined) – 250g
  • Thai basil leaves – 1 cup
  • lemongrass (minced) – 2 stalks
  • lime juice – from 2 limes
  • red chili (minced) – 1
  • fish sauce – 2 tbsp
  • brown sugar – 1 tbsp

  • wooden spoon

Preparation:

Start by cooking the black rice according to package instructions. In a saucepan, heat the coconut milk over medium heat and add the minced lemongrass, red chili, fish sauce, and brown sugar. Let it simmer for 5 minutes to infuse the flavors.

In a skillet, heat some oil and sauté the shrimp until they turn pink and opaque. Add the Thai basil leaves and lime juice, then set aside.
