Exploring Global Flavors: Mango Coconut Curry

As the weather warms up, I find myself craving light and fresh dishes with a touch of warmth and spice. Today, I’m excited to share with you my recipe for Mango Coconut Curry. This dish combines the tropical sweetness of mango with the creamy richness of coconut milk, all brought together with a blend of aromatic spices. It’s a flavorful and satisfying meal that is perfect for a summer evening.

Ingredients:

  • 2 ripe mangoes, peeled and diced
  • 400ml coconut milk
  • 400g chicken breast, diced
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1-inch piece of ginger, minced
  • 1 lime, juiced
  • to taste
  • for garnish

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • measuring spoons

To start, heat a large skillet over medium heat and add a splash of oil. Sauté the onion, garlic, and ginger until fragrant. Add in the diced chicken breast and cook until browned on all sides. Sprinkle in the curry powder, cumin, and coriander, stirring well to coat the chicken.

Next, pour in the coconut milk and diced mangoes. Bring the mixture to a simmer and let it cook for about 15-20 minutes until the chicken is cooked through and the flavors have melded together. Squeeze in the juice of one lime and season with salt and pepper to taste.

Serve the Mango Coconut Curry hot over a bed of rice, garnished with fresh cilantro. The combination of sweet mango, creamy coconut milk, and fragrant spices creates a harmony of flavors that will transport you to tropical paradise.

The total weight of the cooked dish is approximately 1200 grams, with 4 servings. Each serving weighs around 300 grams and has an estimated calorie count of 350 calories.

Tip: For an extra burst of freshness, sprinkle some lime zest over the finished curry before serving. The bright citrus flavor will enhance the dish’s tropical notes.

I hope you enjoy making and savoring this Mango Coconut Curry recipe as much as I do. Feel free to experiment with different proteins or additional vegetables to make it your own. Happy cooking!
