This recipe was inspired by a recent trip to a spice market where I discovered an incredible blend of exotic spices that I knew would make the perfect pairing for a dish that’s both comforting and adventurous.

Ingredients:

  • boneless lamb shoulder (cubed) – 500g
  • coconut milk – 400ml
  • plantains (sliced) – 2
  • pine nuts – 50g
  • garam masala – 2 tbsp
  • turmeric – 1 tsp
  • cinnamon stick – 1
  • fresh coriander (chopped) – 1/2 cup

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

Preparation:

Start by heating a large skillet over medium heat. Add the cubed lamb shoulder and brown it on all sides. Once the lamb is browned, add the coconut milk, sliced plantains, pine nuts, garam masala, turmeric, and cinnamon stick to the skillet. Bring the mixture to a simmer, then cover and let it cook for about 45 minutes, stirring occasionally.

Once the lamb is cooked through and the flavors have melded together, remove the cinnamon stick and discard it. Stir in the fresh coriander and let it simmer for an additional 5 minutes to allow the flavors to come together.

Tips:

For an extra burst of flavor, toast the pine nuts in a dry skillet before adding them to the dish. This will enhance their nutty flavor and add a delightful crunch to each bite.

Serve this aromatic lamb and plantain stew over steamed rice or with warm naan bread for a complete and satisfying meal. This dish is perfect for sharing with loved ones and is sure to impress with its unique blend of spices and textures.
