These brownie bites are the perfect solution, combining the rich, fudgy texture of a traditional brownie with the natural sweetness and health benefits of sweet potatoes. Plus, they’re gluten-free and naturally sweetened, making them a guilt-free indulgence for any time of day.

Ingredients:

  • 200g sweet potatoes, cooked and mashed
  • 100g almond butter
  • 30g cocoa powder
  • 50ml maple syrup
  • 5ml vanilla extract
  • 5g baking powder
  • 2g salt
  • 50g chocolate chips

To start, preheat your oven to 350°F (180°C) and grease a mini muffin tin. In a mixing bowl, combine the mashed sweet potatoes, almond butter, cocoa powder, maple syrup, vanilla extract, baking powder, and salt. Stir until well combined and smooth. Gently fold in the chocolate chips, reserving a few to sprinkle on top.

Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full. Top each brownie bite with a few chocolate chips for an extra touch of sweetness. Bake in the preheated oven for 20-25 minutes, or until the tops are set and a toothpick inserted into the center comes out clean.
