Today’s Special: Sweet Potato Brownie Bites

I’m excited to share a delightful and unexpected treat with you all today – my recipe for Sweet Potato Brownie Bites! As we head into the cooler months, I find myself craving warm, comforting desserts that also pack a nutritional punch. These brownie bites are the perfect solution, combining the rich, fudgy texture of a traditional brownie with the natural sweetness and health benefits of sweet potatoes. Plus, they’re gluten-free and naturally sweetened, making them a guilt-free indulgence for any time of day.

Ingredients:

  • 200g sweet potatoes, cooked and mashed
  • 100g almond butter
  • 30g cocoa powder
  • 50ml maple syrup
  • 5ml vanilla extract
  • 5g baking powder
  • 2g salt
  • 50g chocolate chips

Kitchen Tools:

  • mixing bowl
  • spatula
  • measuring cups and spoons
  • mini muffin tin

To start, preheat your oven to 350°F (180°C) and grease a mini muffin tin. In a mixing bowl, combine the mashed sweet potatoes, almond butter, cocoa powder, maple syrup, vanilla extract, baking powder, and salt. Stir until well combined and smooth. Gently fold in the chocolate chips, reserving a few to sprinkle on top.

Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full. Top each brownie bite with a few chocolate chips for an extra touch of sweetness. Bake in the preheated oven for 20-25 minutes, or until the tops are set and a toothpick inserted into the center comes out clean.

Once baked, remove the brownie bites from the oven and allow them to cool in the tin for a few minutes before transferring to a wire rack to cool completely. Enjoy these Sweet Potato Brownie Bites warm or at room temperature, and store any leftovers in an airtight container for up to 3 days.

This recipe makes approximately 12 brownie bites, with each serving weighing about 40g. One serving of these Sweet Potato Brownie Bites is approximately 120 calories.

For an extra special twist, try adding a sprinkle of sea salt on top of the brownie bites before baking for a sweet and salty flavor combination that will keep you coming back for more. I hope you give these Sweet Potato Brownie Bites a try and make them your own with your favorite mix-ins or toppings. Happy baking!
