Summer Gazpacho: A Refreshing Blend of Vibrant Flavors

Refreshing Summer Gazpacho

Today, I am excited to share with you a refreshing summer gazpacho recipe that is perfect for those hot days when you just want something light and flavorful. This chilled soup is bursting with the vibrant tastes of summer vegetables and herbs, making it a delightful dish to enjoy on a sunny afternoon.

Ingredients:

  • 1 large cucumber, peeled and chopped
  • 3 large tomatoes, diced
  • 1 red bell pepper, seeded and chopped
  • 1/2 red onion, chopped
  • 2 cloves of garlic, minced
  • 1/4 cup of fresh basil leaves
  • 1/4 cup of fresh parsley
  • 3 tablespoons of red wine vinegar
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Kitchen Tools:

  • cutting board
  • mixing bowl

To start, combine the cucumber, tomatoes, red bell pepper, red onion, garlic, basil, and parsley in a blender. Blend until smooth. Then, add in the red wine vinegar and olive oil, and continue to blend until well combined. Season the gazpacho with salt and pepper to taste.

Once the gazpacho is blended to your desired consistency, transfer it to a mixing bowl and refrigerate for at least an hour to allow the flavors to meld together. When ready to serve, give the gazpacho a good stir and adjust the seasoning if needed.

This summer gazpacho weighs approximately 1400 grams once cooked and serves 6 people. Each serving is about 233 grams, and contains an estimated 150 calories.

One clever tip for this gazpacho is to garnish each bowl with a drizzle of balsamic reduction before serving. This adds a touch of sweetness and acidity that complements the fresh flavors of the vegetables beautifully.
