These savory pancake puffs are a fun twist on the classic pancake, with a fluffy texture and a burst of savory flavors in every bite. The combination of ingredients may seem unusual, but trust me, it works like magic in this recipe!

To start, gather the following ingredients:

  • 150g all-purpose flour
  • 10g baking powder
  • 3g salt
  • 200ml milk
  • 1 egg
  • 50g grated cheese
  • 50g cooked bacon bits
  • 30g chopped green onions

Next, grab these kitchen tools:

  • mixing bowl
  • whisk
  • muffin tin
  • mixing spoon

Start by preheating your oven to 200°C and greasing the muffin tin. In a mixing bowl, combine the flour, baking powder, and salt. In a separate bowl, whisk together the milk and egg until well combined. Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Gently fold in the grated cheese, cooked bacon bits, and chopped green onions. The batter will be slightly lumpy, which is perfectly fine. Spoon the batter into the muffin tin, filling each cup about three-quarters full.

Bake the pancake puffs in the preheated oven for 15-18 minutes, or until they are puffed up and golden brown on top. Remove from the oven and let them cool slightly before serving. These pancake puffs are best enjoyed warm and fresh out of the oven.

This recipe makes approximately 12 pancake puffs. One serving contains around 120g of the cooked dish, with each serving clocking in at approximately 250 calories.

A unique tip for this recipe is to sprinkle some extra cheese on top of the pancake puffs before baking for an extra cheesy crust that will add a lovely crunch to each bite.
