– 200g canned chickpeas, drained and rinsed
– 400g canned diced tomatoes
– 50g dried apricots, chopped
– Salt and pepper to taste
– Fresh cilantro, chopped (for garnish)

Preparation

Start by heating a large skillet over medium heat. Add the diced lamb and cook until browned on all sides. Remove the lamb from the skillet and set aside.

In the same skillet, add the chopped onion and garlic. Cook until softened, then add the red bell pepper slices.

Cooking the Lamb
