Introduction

Today, I am excited to share a unique and flavorful dish that is perfect for a cozy evening at home. This recipe combines unexpected ingredients to create a dish that is both comforting and exciting.

Ingredients

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

For this dish, you will need:
– 300g boneless lamb shoulder, diced
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 1 red bell pepper, sliced
– 1 tsp smoked paprika
– 1 tsp ground cumin
– 1/2 tsp cinnamon
– 200g canned chickpeas, drained and rinsed
– 400g canned diced tomatoes
– 50g dried apricots, chopped
– Salt and pepper to taste
– Fresh cilantro, chopped (for garnish)

Preparation

Start by heating a large skillet over medium heat. Add the diced lamb and cook until browned on all sides. Remove the lamb from the skillet and set aside.

In the same skillet, add the chopped onion and garlic. Cook until softened, then add the red bell pepper slices.

Cooking the Lamb

Return the browned lamb to the skillet. Season with smoked paprika, cumin, cinnamon, salt, and pepper. Stir well to coat the lamb in the spices.

Adding the Remaining Ingredients

Add the drained chickpeas, canned diced tomatoes, and chopped dried apricots to the skillet. Stir everything together and bring to a simmer. Let the mixture cook for about 20 minutes, or until the lamb is tender and the flavors have melded together.

Tips

For an added depth of flavor, try serving this dish with a dollop of Greek yogurt on top. The creamy tanginess of the yogurt pairs perfectly with the spiced lamb and sweet apricots.

Serving

Once the lamb stew is ready, sprinkle with fresh chopped cilantro for a pop of color and freshness. Serve the stew hot with your favorite crusty bread or over fluffy couscous.
