As the fall season approaches, I find myself craving warm, comforting dishes that celebrate the flavors of the harvest. Today, I am excited to share with you my recipe for Miso Glazed Pumpkin with Pomegranate. This dish combines the natural sweetness of roasted pumpkin with the umami richness of miso, all balanced out by the bright burst of pomegranate arils. It’s a truly unique and unexpected combination that will delight your taste buds.

To create this dish, you will need the following ingredients:

  • 1 small pumpkin, peeled and diced (about 500g)
  • 3 tablespoons of white miso paste
  • 1 fresh pomegranate, arils removed
  • 2 tablespoons of olive oil
  • 1 tablespoon of maple syrup
  • Salt and pepper to taste

In terms of kitchen tools, you will need:

  • baking sheet
  • mixing bowl
  • whisk
  • spatula

Start by preheating your oven to 400°F (200°C). In a mixing bowl, combine the miso paste, olive oil, maple syrup, salt, and pepper. Whisk everything together until well combined. Add the diced pumpkin to the bowl and toss until the pumpkin is evenly coated with the miso mixture.

Spread the miso-glazed pumpkin out on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes, or until the pumpkin is tender and caramelized around the edges.
