Today, I am excited to share a delightful recipe that combines unexpected flavors and textures for a truly unique dining experience. This dish was inspired by a recent trip to a tropical paradise, where I discovered a new ingredient that I couldn’t wait to experiment with in the kitchen.

Ingredients

  • dragon fruit (peeled and diced) – 200g
  • grapefruit segments – 150g
  • avocado (diced) – 1 medium avocado
  • cooked quinoa – 250g
  • toasted cashews – 100g
  • fresh mint leaves – 1/4 cup
  • lime juice – 2 tbsp
  • honey – 1 tbsp
  • salt and pepper to taste

Preparation

In a large bowl, combine the diced dragon fruit, grapefruit segments, diced avocado, cooked quinoa, and toasted cashews. In a small bowl, whisk together the lime juice, honey, salt, and pepper. Pour the dressing over the fruit and quinoa mixture and toss gently to combine. Add in the fresh mint leaves and give it one final toss before serving.

Serving
