Ingredients:

  • Arborio rice (300g)
  • Mixed mushrooms (such as cremini, shiitake, and oyster) sliced (400g)
  • Onion, finely chopped (1 large)
  • Garlic, minced (3 cloves)
  • Dry white wine (150ml)
  • Vegetable broth (1 liter)
  • Heavy cream (100ml)
  • Grated Parmesan cheese (100g)
  • Butter (50g)
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

  • Cutting board
  • Large skillet
  • Wooden spoon
  • Grater
  • Medium saucepan

To start, heat some olive oil in a large skillet over medium heat. Add the onions and garlic, sautéing until they are soft and translucent. Next, add the mushrooms and cook until they are browned and tender.

In a separate saucepan, heat the vegetable broth until it simmers. Keep it warm on low heat.

Add the Arborio rice to the skillet with the mushrooms and stir until the rice is coated with the oil. Pour in the white wine and cook until it is absorbed by the rice.

Begin adding the warm vegetable broth to the rice mixture, one ladleful at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue this process until the rice is creamy and al dente.

Stir in the heavy cream, butter, and grated Parmesan cheese until well combined. Season with salt and pepper to taste.

Serve the creamy mushroom risotto hot, garnished with fresh parsley. Enjoy the rich and delicious flavors of this comforting dish!
