Exotic Delight: Spicy Mango Coconut Shrimp Stir-Fry Recipe

Today’s Recipe: Spicy Mango Coconut Shrimp Stir-Fry

Welcome to my blog! Today, I am excited to share a recipe that combines the sweetness of fresh mango with the savory taste of coconut and a spicy kick of shrimp stir-fry. This dish is perfect for a summer evening when you’re craving something exotic and delicious.

Ingredients:

  • 1 large mango, diced
  • 200ml coconut milk
  • 300g shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red chili pepper, sliced
  • 2 tbsp soy sauce
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • 2 tbsp coconut oil
  • Salt and pepper to taste

Kitchen Tools:

  • wooden spoon
  • measuring cups

To begin, heat coconut oil in a wok over medium heat. Add minced garlic, grated ginger, and sliced chili pepper. Sauté for 1-2 minutes until fragrant.

Next, add chopped onion and sliced bell pepper to the wok. Cook until the vegetables are tender, about 3-4 minutes. Then, push the vegetables to the side of the wok and add the shrimp. Cook until pink and opaque, about 2-3 minutes on each side.

Once the shrimp is cooked, pour in the coconut milk and soy sauce. Stir well to combine all the ingredients. Let the mixture simmer for a few minutes until slightly thickened.

Now, add the diced mango to the wok and stir gently to combine. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Allow the flavors to meld together for another 2-3 minutes.

Finally, sprinkle fresh cilantro over the top of the stir-fry before serving. This dish is best enjoyed hot with a side of steamed rice or noodles.

The total weight of the cooked dish is approximately 1200g, making 4 servings with an average weight of 300g per serving. Each serving is estimated to be around 350 calories.

Clever Tip:

To add an extra layer of flavor, try marinating the shrimp in a mixture of soy sauce, lime juice, and minced garlic for 30 minutes before cooking. This will enhance the taste of the shrimp and make the dish even more delicious!
