Lemon lavender meringue pie is a delightful twist on the classic lemon meringue pie. The delicate floral notes of lavender combined with the tangy citrus of lemon create a refreshing and unique dessert that is perfect for summer gatherings or special occasions. Today, I’m excited to share this recipe with you to add a touch of elegance to your dessert table.

Ingredients:

  • all-purpose flour (200g)
  • sugar (150g)
  • butter (150g)
  • lemons (4, juiced and zested)
  • lavender buds (2 tbsp)
  • eggs (4, separated)
  • cornstarch (20g)
  • cream of tartar (1/2 tsp)

Kitchen Tools:

  • saucepan

To start, preheat your oven to 350°F (180°C). In a mixing bowl, combine the flour, 50g of sugar, and 100g of butter. Mix until the dough comes together. Roll out the dough with a rolling pin and transfer it to a pie dish. Press the dough evenly into the dish and bake for 15 minutes until golden brown.

In a saucepan, combine the lemon juice, lemon zest, lavender buds, 100g of sugar, cornstarch, and egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens. Pour the lemon lavender filling into the pre-baked pie crust.

In a clean mixing bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the remaining sugar and continue to beat until stiff peaks form. Spread the meringue over the lemon lavender filling, making sure to seal the edges of the pie.

Bake the pie for an additional 15-20 minutes until the meringue is lightly browned. Allow the pie to cool before serving to let the flavors meld together.

This Lemon Lavender Meringue Pie weighs approximately 1000g and serves 8. Each serving is around 125g. The approximate calorie count per serving is 300 calories.
