Today’s Vegetarian Recipe: Spicy Chickpea Stuffed Bell Peppers

Greetings foodies! Today, I’m excited to share with you a recipe that’s perfect for a cozy night in or a casual get-together with friends. These spicy chickpea stuffed bell peppers are packed full of flavor and are sure to impress even the pickiest of eaters.

For this dish, I was inspired by the vibrant colors of bell peppers at the farmers’ market and the desire to create a vegetarian meal that doesn’t skimp on taste. The combination of spicy chickpeas, sweet bell peppers, and creamy feta cheese is simply irresistible.

Ingredients:

  • 4 large bell peppers
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 small red onion, diced
  • 2 cloves of garlic, minced
  • 200g cherry tomatoes, halved
  • 100g feta cheese, crumbled
  • Handful of fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste

Start by preheating your oven to 200°C. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers cut side up in a baking dish and set aside.

In a skillet, heat olive oil over medium heat. Add diced red onion and minced garlic, sautéing until fragrant. Add in the chickpeas, cherry tomatoes, smoked paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes, until the chickpeas are slightly crispy.

Remove the skillet from heat and stir in crumbled feta cheese and chopped parsley. Spoon the chickpea mixture into the bell peppers, dividing evenly among them. Cover the baking dish with foil and bake for 25-30 minutes, until the bell peppers are tender.

Serve the spicy chickpea stuffed bell peppers hot, garnished with extra parsley and a drizzle of olive oil. These peppers are perfect as a main dish or a side for a larger meal.

This dish weighs approximately 1000g in total, serves 4 people, with each serving weighing 250g. Each serving is estimated to be around 300 calories.

Clever Tip:

To add extra crunch to the dish, sprinkle some toasted pine nuts on top of the stuffed bell peppers before serving. The nutty flavor pairs perfectly with the spicy chickpeas and creamy feta cheese.
