Ingredients:

  • purple cauliflower (200g)
  • blood oranges (2)
  • pomegranate seeds (50g)
  • fennel bulb (150g)
  • honey (30ml)
  • olive oil (45ml)
  • salt to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • mixing bowl
  • whisk
  • baking sheet

Begin by preheating your oven to 400°F (200°C). On a baking sheet, lay out the purple cauliflower florets and drizzle them with olive oil. Season with salt and roast in the oven for 20-25 minutes until they are tender and slightly caramelized.

While the cauliflower is roasting, prepare the dressing. In a mixing bowl, combine the juice of one blood orange, honey, olive oil, and a pinch of salt. Whisk the dressing until emulsified.

Next, thinly slice the fennel bulb using a sharp chef’s knife. Cut the remaining blood orange into segments. In a large mixing bowl, toss the roasted purple cauliflower with the sliced fennel, blood orange segments, and pomegranate seeds.

Drizzle the citrus dressing over the salad and gently toss to coat everything evenly. The vibrant colors and flavors will come together beautifully to create a truly artful dish.
