Ingredients:

  • boneless lamb chops
  • fresh pineapple chunks
  • coconut milk
  • cashew nuts
  • green chili, chopped
  • curry powder
  • ginger paste
  • lime, juiced
  • salt and pepper

Kitchen Tools:

  • skillet
  • blender
  • tongs

Preparation:

To start, season the lamb chops with salt, pepper, and curry powder. In a skillet over medium-high heat, sear the lamb chops until they are browned on both sides. Remove the lamb chops from the skillet and set aside.

In the same skillet, add the chopped green chili and ginger paste. Cook for a minute until fragrant. Add the pineapple chunks and cashew nuts, cooking until the pineapple caramelizes slightly.

Return the lamb chops to the skillet and pour in the coconut milk and lime juice. Simmer for about 20 minutes until the lamb is cooked through and the sauce has thickened.
