It’s a dish that combines the earthy richness of cauliflower with the tangy sweetness of red peppers, creating a perfect balance of flavors and textures. Whether you’re a vegetarian looking for a satisfying main course or just want to try something different, this recipe is sure to impress.

Ingredients:

  • 1 head of cauliflower
  • 2 red bell peppers
  • 50ml olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • blender

To start, preheat your oven to 400°F (200°C). Trim the leaves and stem from the cauliflower, then slice it into 1-inch thick steaks. Place the cauliflower steaks on a baking sheet, drizzle with olive oil, and season with smoked paprika, cumin, salt, and pepper. Roast in the oven for 25-30 minutes, until golden brown and tender.

Meanwhile, roast the red bell peppers directly over a gas flame or under the broiler until charred on all sides. Transfer the peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes. Peel off the skin, remove the seeds, and place the roasted peppers in a blender. Add a splash of olive oil, salt, and pepper, then blend until smooth to create the red pepper coulis.

To serve, spoon a generous amount of red pepper coulis onto a plate and top with a roasted cauliflower steak. Drizzle with extra coulis for added flavor, and garnish with fresh herbs or a sprinkle of smoked paprika.
