Welcome, lovely readers! Today, I’m excited to share with you a unique and exotic dessert recipe that will transport your taste buds to a tropical paradise. With a creamy coconut-infused custard base, sweet chunks of fresh pineapple, and a crispy caramelized sugar topping, this Pineapple-Coconut Crème Brûlée is a delightful twist on the classic French dessert. Perfect for a special occasion or just a cozy night in, this dessert is sure to impress your family and friends.

Ingredients:

  • 200g fresh pineapple (diced)
  • 400ml coconut milk
  • 200ml heavy cream
  • 6 egg yolks
  • 150g sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 4 tbsp brown sugar

  • ramekins
  • kitchen torch

To start, preheat your oven to 325°F (160°C). In a saucepan, combine the coconut milk and heavy cream over medium heat until simmering. In a mixing bowl, whisk together the egg yolks, sugar, vanilla extract, and salt until well combined. Slowly pour the hot coconut milk mixture into the egg mixture, whisking constantly to prevent curdling.

Place a few pieces of diced pineapple into each ramekin, then fill the ramekins with the custard mixture. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins. Bake in the preheated oven for 40-45 minutes, or until the custards are just set but still slightly jiggly in the center.

Remove the ramekins from the water bath and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight, to chill and set. Just before serving, sprinkle a tablespoon of brown sugar evenly over each custard. Caramelize the sugar with a kitchen torch until it forms a crispy, golden crust.

The total weight of the cooked dish is approximately 800g, with 4 servings. Each serving weighs around 200g. An estimated calorie count per serving is 350 calories.
