Introducing: Chocolate Rosemary Mousse

Today, I am excited to share with you a unique and unexpected dessert recipe that combines the richness of chocolate with the earthy aroma of fresh rosemary. This decadent Chocolate Rosemary Mousse is a surprisingly delightful treat that is perfect for those looking to elevate their dessert game with a touch of sophistication.

Preparation

To make this flavorful dessert, you will need the following ingredients:

  • 200g dark chocolate (70% cocoa)
  • 3 sprigs of fresh rosemary
  • 300ml heavy cream
  • 50g sugar
  • 2 egg whites

You will also need the following kitchen tools:

  • saucepan
  • mixing bowl
  • hand mixer
  • whisk

Start by chopping the dark chocolate into small pieces and placing them in a mixing bowl. In a saucepan, heat the heavy cream with the rosemary sprigs until it just begins to simmer. Remove from heat and let it steep for 10 minutes to infuse the cream with the rosemary flavor. Strain the cream to remove the rosemary sprigs.

Pour the infused cream over the chopped chocolate and let it sit for a few minutes to allow the chocolate to melt. Stir until smooth and let it cool to room temperature.

In a separate mixing bowl, whisk the egg whites until stiff peaks form. Gradually add the sugar and continue to whisk until glossy.

Gently fold the whipped egg whites into the chocolate mixture until well combined. Be careful not to deflate the mixture as you want to keep it light and airy.

Tips

For an extra layer of flavor, you can sprinkle some finely chopped rosemary leaves on top of the mousse before serving. This will add a pop of freshness and visual appeal to the dessert.

Serving

Once the mousse is well combined, divide it into individual serving glasses or ramekins. Refrigerate for at least 2 hours to allow the mousse to set and develop its rich flavor.
