Ingredients:

  • 500g diced pumpkin
  • 200g canned chickpeas, drained
  • 15g curry powder
  • 5g ground cumin
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 200ml coconut milk
  • 8 small tortillas
  • 1 lime, juiced
  • Fresh coriander, for garnish

Start by preheating your oven to 200°C (400°F) and lining a baking sheet with parchment paper. In a mixing bowl, combine the diced pumpkin, drained chickpeas, curry powder, ground cumin, minced garlic, and chopped onion. Toss everything together until the pumpkin and chickpeas are evenly coated with the spices.

Spread the pumpkin and chickpea mixture out on the prepared baking sheet and roast in the oven for 25-30 minutes, or until the pumpkin is tender and slightly caramelized.

While the pumpkin is roasting, heat a skillet over medium heat. Add the coconut milk and simmer for 5 minutes to reduce slightly. Once the pumpkin is done roasting, add it to the skillet with the coconut milk and stir to combine. Squeeze in the lime juice for a pop of freshness.

Warm the tortillas in a dry skillet or directly over a gas flame until they are pliable. Fill each tortilla with a generous scoop of the curry spiced pumpkin mixture and top with fresh coriander.
