Ingredients:

  • quinoa (200g)
  • cucumber, diced (100g)
  • cherry tomatoes, halved (150g)
  • red onion, finely chopped (50g)
  • fresh parsley, chopped (30g)
  • feta cheese, crumbled (100g)
  • lemon, juiced and zested
  • olive oil (30ml)
  • salt and pepper to taste

Kitchen Tools:

  • saucepan
  • strainer
  • mixing bowl
  • zester

Start by rinsing the quinoa under cold water in a strainer to remove any bitterness. In a saucepan, bring 400ml of water to a boil and add the quinoa. Reduce the heat to low, cover, and let it simmer for 15 minutes until all the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing it up with a fork.

In a mixing bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, chopped red onion, and fresh parsley. Toss everything together gently.

In a small bowl, whisk together the lemon juice, lemon zest, olive oil, salt, and pepper. Pour this dressing over the quinoa salad and toss to combine. Finally, sprinkle the crumbled feta cheese on top.
