  • 400g fresh blueberries
  • 30g fresh basil leaves
  • 250ml coconut water
  • 30ml lemon juice
  • 60ml honey

  • blender
  • fine mesh strainer
  • saucepan
  • ice cream maker

Start by rinsing the blueberries and basil leaves under cold water. In a saucepan, combine the blueberries, basil leaves, coconut water, lemon juice, and honey. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the blueberries have softened and released their juices, about 10 minutes.

Remove the saucepan from heat and let the mixture cool to room temperature. Once cooled, pour the mixture into a blender and blend until smooth. Strain the mixture through a fine mesh strainer into a clean bowl, pressing down to extract as much liquid as possible.

Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions until it reaches a sorbet-like consistency, about 20-25 minutes. If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and freeze it, stirring every hour to break up the ice crystals until it reaches the desired consistency.

Once the sorbet is ready, scoop it into bowls and garnish with fresh basil leaves for an extra pop of flavor. This Blueberry Basil Sorbet is best enjoyed immediately, but you can also store it in an airtight container in the freezer for up to a week.
