Ingredients

– 1 cup quinoa, rinsed
– 1 1/2 cups water
– 1 ripe mango, diced
– 1/2 cup coconut milk
– 1 jalapeño, thinly sliced
– 1/4 cup chopped cilantro
– Juice of 1 lime
– Salt and pepper to taste
