Ingredients:

  • 200g Arborio rice
  • 500g pumpkin, diced
  • 1 liter chicken broth
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp pumpkin pie spice
  • 100g Parmesan cheese, grated
  • 50g butter
  • to taste

To start, heat the chicken broth in a saucepan until simmering. In another saucepan, melt the butter over medium heat. Add the diced onion and minced garlic, cooking until softened. Next, add the Arborio rice to the pan, stirring to coat the grains with the butter.

Once the rice is translucent around the edges, begin adding the hot chicken broth one ladle at a time, stirring continuously. Allow the liquid to be absorbed before adding more broth. This process will take about 20-25 minutes until the rice is creamy and al dente.

Meanwhile, in a separate pan, roast the diced pumpkin with a sprinkle of pumpkin pie spice until tender and slightly caramelized. Add the cooked pumpkin to the risotto along with the grated Parmesan cheese. Season with salt and black pepper to taste, stirring well to combine all the flavors.

Serve the spiced pumpkin risotto hot, garnished with additional Parmesan cheese and a sprinkle of pumpkin pie spice for an extra burst of flavor. Enjoy the creamy texture of the risotto combined with the sweet and earthy notes of the pumpkin!
