Ingredients:

  • 4 large bell peppers (mixed colors)
  • 200g ground lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup cooked quinoa
  • 1/4 cup raisins
  • 1/4 cup chopped almonds
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Start by preheating your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes from the inside. Place the peppers in a baking dish, cut side up.

In a skillet over medium heat, cook the ground lamb with the onion and garlic until the lamb is browned and the vegetables are soft. Add the cooked quinoa, raisins, chopped almonds, cumin, cinnamon, ginger, salt, and pepper. Mix well to combine all the flavors.

Spoon the lamb and quinoa mixture into each bell pepper, packing it down firmly. Cover the baking dish with foil and bake in the preheated oven for 30-35 minutes, or until the peppers are tender.

Once the stuffed peppers are cooked, remove them from the oven and garnish with fresh parsley. Serve hot and enjoy the burst of Moroccan-inspired flavors in every bite!
