Today’s Recipe: Spicy Mango Coconut Shrimp Curry

I’m excited to share a unique and flavorful recipe with you today that combines the sweetness of mango, the creaminess of coconut, and the heat of spicy curry. This dish has become a favorite in my house for special occasions, as it’s perfect for gatherings with friends and family.

Ingredients:

  • 500g shrimp (peeled and deveined)
  • 1 large mango, diced
  • 400ml coconut milk
  • 3 tbsp red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp fish sauce
  • Juice of 1 lime
  • 2 tbsp vegetable oil
  • Handful of fresh basil leaves

Kitchen Tools:

To start, heat the vegetable oil in a wok over medium heat. Add the sliced onion, garlic, and grated ginger, and sauté until fragrant. Next, stir in the red curry paste and cook for another minute to release the flavors.

Add the sliced bell pepper to the wok and cook until slightly softened. Then, pour in the coconut milk and bring the mixture to a gentle simmer. Let it cook for a few minutes until the sauce thickens slightly.

Once the sauce has thickened, add the diced mango and shrimp to the wok. Cook until the shrimp turn pink and opaque, stirring occasionally. Season the curry with fish sauce and lime juice, adjusting to taste.

Before serving, tear the fresh basil leaves and sprinkle them over the curry for an added burst of freshness.

The total weight of the cooked dish is approximately 1200g, making around 4 servings. Each serving weighs about 300g, with an estimated calorie count of 380 per serving.

To make this dish even more flavorful, try adding a handful of fresh cilantro leaves right before serving. The combination of basil and cilantro adds a bright and herbaceous note to the curry that will impress your guests.
