Ingredients:

  • 4 large bell peppers
  • 1 cup cooked quinoa
  • 200g cherry tomatoes, halved
  • 100g feta cheese, crumbled
  • 1/4 cup Kalamata olives, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Season with salt and pepper, then stuff the mixture into the hollowed-out bell peppers. Place the stuffed peppers in a baking dish and drizzle with olive oil.

Bake the stuffed peppers in the preheated oven for 25-30 minutes, or until the peppers are tender and slightly charred. Remove from the oven and let them cool for a few minutes before serving. The aroma of the Mediterranean herbs and cheese will fill your kitchen, enticing you to dig in.
