Today, I’m excited to share a recipe that brings together the sweetness of caramelized onions with the savory richness of butternut squash in a cozy pasta dish perfect for the fall season.

Ingredients:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

For this recipe, you’ll need:

  • 300g butternut squash, peeled and cubed
  • 2 large onions, thinly sliced
  • 3 cloves of garlic, minced
  • 250g pasta of your choice
  • 1/2 cup vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Start by heating olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 20 minutes. Add the minced garlic and cook for another minute until fragrant.

While the onions are caramelizing, cook the pasta according to package instructions until al dente. Drain and set aside.

Once the onions are caramelized, add the cubed butternut squash to the skillet. Cook until the squash is tender, about 10-15 minutes. Add vegetable broth to the skillet and simmer until the liquid has reduced slightly and coats the vegetables.
