This recipe for Harvest Stuffed Acorn Squash is a celebration of fall flavors and ingredients that will surely become a favorite in your home too.

For this recipe, you’ll need the following ingredients:

  • 2 medium acorn squash
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 large apple, diced
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

To prepare this dish, you’ll need the following kitchen tools:

  • saucepan
  • mixing bowl

Start by preheating your oven to 400°F (200°C). Cut the acorn squash in half, scoop out the seeds, and place them cut-side down on a baking sheet. Roast in the oven for about 30-40 minutes, or until the squash is tender.

While the squash is roasting, rinse the quinoa under cold water. In a saucepan, bring the vegetable broth to a boil and add the quinoa. Reduce the heat, cover, and let it simmer for 15-20 minutes, or until the quinoa is cooked.

In a large mixing bowl, combine the cooked quinoa, chickpeas, diced apple, dried cranberries, chopped pecans, maple syrup, cinnamon, salt, and pepper. Mix well to combine all the ingredients.

Once the squash is ready, remove them from the oven and flip them over. Fill each squash half with the quinoa mixture, pressing it down gently to pack it in.

Return the stuffed squash to the oven and bake for an additional 15-20 minutes, or until the filling is heated through and the flavors have melded together.

Once done, remove the squash from the oven and let them cool slightly before serving. Each stuffed squash half is a meal in itself, perfect for a cozy fall dinner.

This dish serves 4 and each serving weighs approximately 400g. One serving of this Harvest Stuffed Acorn Squash is around 350 calories.

One tip to make this dish even more delicious is to sprinkle some grated Parmesan cheese on top of the stuffed squash before baking them. The savory richness of the cheese adds an extra layer of flavor that pairs perfectly with the sweet and nutty filling.
