As the seasons change and cooler weather approaches, I find myself drawn to hearty, warming dishes that bring a sense of nostalgia and coziness to the table. This dish combines unexpected flavors and ingredients to create a truly memorable dining experience.

  • maple syrup

I start by preheating my oven to 400°F (200°C) and preparing a baking sheet with parchment paper. In a small bowl, I whisk together the maple syrup and balsamic vinegar to create a tangy-sweet dressing. I pour this over the cooked quinoa, mixing it in gently to coat each grain. I then add in the roasted sweet potatoes and brussel sprouts, crumbled feta cheese, and arils from the pomegranate.

To finish, I give everything a final toss to combine all the flavors and textures. This dish is best served warm, allowing the creamy feta, juicy pomegranate arils, and roasted veggies to meld together harmoniously.
