For this recipe, you will need the following ingredients:

  • boneless chicken thighs (300g)
  • jerk seasoning (50g)
  • pineapple, diced (100g)
  • red bell pepper, sliced (50g)
  • red onion, sliced (50g)
  • corn tortillas (6)
  • lime, cut into wedges
  • fresh cilantro, chopped
  • hot sauce, for serving

To prepare this dish, you will need the following kitchen tools:

  • grill pan
  • tongs
  • chef’s knife
  • cutting board
  • mixing bowl
  • skillet

Start by marinating the chicken thighs in the jerk seasoning for at least 30 minutes. Meanwhile, preheat your grill pan over medium-high heat. Once hot, grill the chicken thighs for 4-5 minutes per side, or until cooked through. Remove from heat and let rest for a few minutes before slicing into strips.

In a skillet, sauté the pineapple, red bell pepper, and red onion until tender and caramelized, about 5-7 minutes. Warm the corn tortillas in a separate skillet or directly over a gas flame until slightly charred and pliable.

To assemble the tacos, fill each tortilla with slices of jerk chicken, sautéed pineapple and vegetables, and a sprinkle of fresh cilantro. Squeeze a wedge of lime over the top and serve with hot sauce on the side for an extra kick.
