Introduction

I’m excited to share a brand new recipe with you today that was inspired by the vibrant colors of spring. This dish is perfect for a light and refreshing meal that will leave your taste buds tingling with excitement.

Ingredients

  • purple cauliflower (200g)
  • golden beets (150g)
  • blood orange (1)
  • pistachios (50g)
  • feta cheese (100g)
  • honey (2 tbsp)
  • olive oil (3 tbsp)
  • salt (to taste)
  • pepper (to taste)

  • baking sheet

Preparation

I start by preheating the oven to 400°F (200°C). Next, I cut the purple cauliflower into florets and the golden beets into small cubes. I place them on a baking sheet, drizzle with olive oil, and season with salt and pepper before roasting in the oven for about 20 minutes until tender.

While the vegetables are roasting, I prepare the dressing by whisking together the juice of the blood orange, honey, olive oil, salt, and pepper in a mixing bowl. I also roughly chop the pistachios and crumble the feta cheese.

Once the vegetables are done, I transfer them to a serving platter and drizzle with the blood orange dressing. I sprinkle the chopped pistachios and crumbled feta cheese on top before serving.

Tips

For an extra burst of flavor, try adding a drizzle of balsamic glaze over the finished dish. It adds a sweet and tangy note that complements the earthy flavors of the cauliflower and beets perfectly.

Serving

This colorful and flavorful dish weighs approximately 650g once cooked. It serves 4 people, with each serving weighing around 162g. A serving of this dish is approximately 250 calories.
