  • 700g pork shoulder (boneless)
  • 3 fresh peaches
  • 1 onion
  • 3 garlic cloves
  • 2 chipotle peppers in adobo sauce
  • 50g brown sugar
  • 60ml apple cider vinegar
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 10 corn tortillas
  • for garnish

To start, season the pork shoulder with salt, pepper, cumin, and cinnamon. Place it in the slow cooker. In a blender, combine the peaches (peeled and pitted), onion, garlic, chipotle peppers, brown sugar, and apple cider vinegar. Blend until smooth. Pour the mixture over the pork shoulder in the slow cooker.

Cook on low for 8 hours or until the pork is tender and easily shreds with a fork. Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the peach BBQ sauce.

Warm the corn tortillas in a dry skillet until soft and pliable. Fill each tortilla with a generous portion of the peach BBQ pulled pork. Top with fresh cilantro for a burst of freshness.
