Ingredients:

  • raw almonds (200g)
  • ripe avocado
  • dried blueberries (50g)
  • honey
  • sea salt

Kitchen Tools:

  • food processor
  • mixing bowl
  • spatula

To start, preheat your oven to 350°F (180°C). Spread the raw almonds on a baking sheet and toast them in the oven for about 10-15 minutes until they are fragrant and golden brown. Let them cool before transferring them to a food processor.

Next, peel and pit the ripe avocado, and add it to the food processor with the toasted almonds. Blend the almonds and avocado together until you have a smooth, creamy mixture. Transfer the mixture to a mixing bowl and gently fold in the dried blueberries, honey, and sea salt until everything is evenly combined.

Using a small cookie scoop or spoon, portion out the mixture into bite-sized balls and place them on a parchment-lined baking sheet. Place the sheet in the refrigerator for at least 30 minutes to allow the balls to firm up.

Once the snack balls are set, they are ready to enjoy! The creamy avocado pairs beautifully with the crunchy almonds and sweet blueberries, creating a satisfying and nutritious snack that is perfect for on-the-go or as a midday pick-me-up.

This recipe makes approximately 12 snack balls, with each serving weighing around 30g. One serving of these avocado almond blueberry balls is estimated to be around 120 calories, making them a guilt-free treat for any time of day.
