Greetings, my fellow foodies! Today, I am excited to share a recipe that combines the sweet and tangy flavors of ripe mango with the savory kick of spicy tofu stir-fry. This dish is perfect for a summer day when you crave something light, refreshing, and full of delicious flavors. Let’s dive into the world of exotic ingredients and bold combinations!

Ingredients:

  • 450g firm tofu
  • 1 large ripe mango
  • 1 red bell pepper
  • 200g green beans
  • 200ml coconut milk
  • 50ml soy sauce
  • 1 tbsp curry powder
  • 1 tsp chili flakes
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp cooking oil
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • wok
  • wooden spoon
  • measuring cups

To begin, drain the firm tofu and cut it into cubes. In a wok, heat the cooking oil over medium-high heat. Add the tofu cubes and stir-fry until they are golden brown and crispy. Remove the tofu from the wok and set it aside.

In the same wok, add the minced garlic, grated ginger, and sliced red bell pepper. Stir-fry for a few minutes until the peppers are slightly softened. Add the green beans, diced mango, curry powder, and chili flakes to the wok. Stir everything together and let the flavors meld for a couple of minutes.

Next, pour in the coconut milk and soy sauce. Bring the mixture to a simmer and let it cook for a few more minutes until the vegetables are cooked but still slightly crisp. Season with salt and pepper to taste.

Finally, add the crispy tofu back into the wok and stir gently to combine all the ingredients. Allow the tofu to heat through before serving.

This Spicy Mango Tofu Stir-Fry weighs approximately 1200g after cooking and serves 4 people. Each serving is around 300g and packs a flavorful punch of approximately 350 calories.

Pro tip: For an extra burst of freshness, squeeze some lime juice over the stir-fry just before serving. The citrusy tang will elevate the dish to a whole new level of deliciousness!
