Mexican-Inspired Stuffed Peppers

Hey there, foodies! Today I’m excited to share with you a recipe that was inspired by my recent trip to Mexico. These Mexican-inspired stuffed peppers are bursting with flavor and just the perfect balance of spice and freshness. They make a great dish for a family dinner or a gathering with friends, so let’s dive into the recipe!

Ingredients:

  • 2 large bell peppers
  • 250g lean ground turkey
  • 1/2 cup cooked quinoa
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro, for garnish

Start by preheating your oven to 375°F (190°C). Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place them in a baking dish, cut side up.

In a skillet over medium heat, cook the ground turkey until browned. Add the diced onion and garlic, cooking until softened. Stir in the cooked quinoa, black beans, corn, cumin, chili powder, salt, and pepper. Cook for a few more minutes until everything is well combined.

Spoon the turkey mixture into the bell peppers, filling them to the top. Sprinkle the shredded cheddar cheese on top of each pepper.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once the peppers are cooked through and the cheese is melted and bubbly, remove them from the oven. Garnish with fresh cilantro before serving.

This recipe makes 4 servings, with each serving weighing approximately 200g. One serving of these Mexican-inspired stuffed peppers is approximately 300 calories per serving.

Here’s a little tip: for an extra kick of heat, try mixing in some diced jalapeños or a drizzle of hot sauce into the turkey mixture before stuffing the peppers.
