Today, I’m excited to share my latest creation: creamy pesto pasta with spicy shrimp. This dish is perfect for a cozy night in or a special dinner with loved ones. The creamy pesto sauce adds richness, while the spicy shrimp gives the dish a kick of heat.

To make this dish, you’ll need the following ingredients:

  • 300g pasta
  • 250g shrimp, peeled and deveined
  • 100g pesto sauce
  • 200ml heavy cream
  • 150g cherry tomatoes, halved
  • 2 cloves of garlic, minced
  • 1 tsp red pepper flakes
  • Salt and pepper to taste

To bring this dish to life, you’ll need the following kitchen tools:

  • saucepan
  • skillet
  • wooden spoon
  • pot

Start by cooking the pasta according to the package instructions in a pot of salted water. In the meantime, heat a skillet over medium heat and add a splash of olive oil. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, add the minced garlic and cherry tomatoes. Cook for a few minutes until the tomatoes start to soften. Add the red pepper flakes and season with salt and pepper.

Next, add the heavy cream and pesto sauce to the skillet. Stir well to combine and let the sauce simmer for a few minutes until it thickens slightly. Add the cooked pasta to the sauce and toss to coat evenly.

Finally, add the cooked shrimp back to the skillet and stir gently to combine. Serve the creamy pesto pasta with spicy shrimp hot, garnished with fresh parsley or grated Parmesan cheese.

The total weight of the cooked dish is approximately 1100g, with 4 servings. Each serving is around 275g, with an estimated calorie count of 450 per serving.

One unique tip for this dish is to sprinkle some toasted pine nuts on top before serving. This adds a delicious crunch and nuttiness that complements the creamy pesto sauce perfectly.
