Introduction

Hey there, foodies! Today, I’m excited to share a unique dish that’s perfect for a cozy night in or a special date night dinner. I was inspired to create this recipe by the vibrant colors of spring produce at my local farmer’s market. I wanted to combine unexpected flavors to create a dish that’s both comforting and sophisticated.

Ingredients

  • purple cauliflower (150g)
  • blood oranges (2)
  • pistachios (50g)
  • goat cheese (100g)
  • honey (30ml)
  • olive oil (60ml)
  • salt and pepper to taste

  • mixing bowl
  • whisk
  • microplane grater

Preparation

I start by preheating the oven to 400°F (200°C). I then cut the purple cauliflower into florets and place them on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast in the oven for 25-30 minutes until golden brown and tender.

While the cauliflower is roasting, I prepare the dressing. In a small mixing bowl, I whisk together the juice of one blood orange, honey, olive oil, salt, and pepper. This dressing will add a sweet and tangy flavor to the dish.

Next, I supreme the remaining blood orange by cutting off the peel and pith, then carefully slicing between the membranes to remove the juicy segments. I also roughly chop the pistachios and crumble the goat cheese.

Assembly

Once the cauliflower is roasted, I transfer it to a serving platter. I scatter the blood orange segments, pistachios, and goat cheese over the top. Finally, I drizzle the dressing over the dish and serve immediately.

Tips

For an extra flavor boost, you can add a sprinkle of fresh herbs like mint or parsley just before serving. The herbs will complement the citrusy dressing and add a pop of freshness to the dish.

Serving

This dish serves 4 and each serving weighs approximately 200g. One serving of this colorful and flavorful dish is around 300 calories.
