As the weather starts to cool down and fall begins to make its presence known, I find myself craving warm, hearty dishes that still offer a touch of freshness and lightness. That’s why I’m excited to share my latest creation with you today: Crispy Cauliflower Steaks with Tahini Dressing.

To start, gather your ingredients:

  • 1 head of cauliflower (approximately 700g)
  • 1/2 cup of breadcrumbs
  • 1/4 cup of tahini
  • 2 tablespoons of lemon juice
  • 2 tablespoons of olive oil
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of garlic powder
  • Salt and pepper

Next, grab your kitchen tools:

  • baking sheet
  • knife
  • cutting board
  • mixing bowl
  • whisk
  • brush
  • oven

Start by preheating your oven to 200°C (400°F) and lining a baking sheet with parchment paper. Carefully slice the cauliflower into thick steaks, about 1-inch thick. In a mixing bowl, combine the breadcrumbs, smoked paprika, garlic powder, salt, and pepper. Brush each cauliflower steak with olive oil, then dip into the breadcrumb mixture, ensuring they are evenly coated. Place the steaks on the prepared baking sheet and bake for 25-30 minutes, until golden and crispy.

While the cauliflower steaks are baking, whisk together the tahini, lemon juice, and a bit of water in a small bowl to create a smooth dressing. Season with salt to taste.

Once the cauliflower steaks are crispy and cooked through, remove them from the oven and drizzle with the tahini dressing. Serve hot and enjoy the unique combination of flavors and textures.

This dish weighs approximately 800g after cooking and serves 4. Each serving is around 200g, with an estimated calorie count of 250 per serving.

One clever tip for this recipe is to sprinkle some nutritional yeast over the cauliflower steaks before baking for an extra boost of umami flavor.
